Dhokla is a vegetarian dish, which origin is Gujarat. Dhokla is served as a breakfast or side dish. Dhokla is made from rice flour and split chickpeas powder. There are many types of Dhokla such as Besan Dhokla, Khatta Dhokla, Moong Dal Dhokla, Cheese Dhokla, Rava Dhokla, and many more.

Recipe Ingredients

  • Gram Flour 1/2 cup
  • Salt to taste
  • Sugar 3tsp
  • Turmeric Powder 1/2 tsp
  • Water
  • Eno 5g
  • Oil 1 tsp
  • Mustard seeds
  • Green chilies 4-5.

The process to make Gujarati Dhokla

1. Take a bowl add gram flour in it, then add salt to taste.

2. Then add sugar, Turmeric powder, mix this well.

3. Add water as required to make a nice thick batter.

4. There should not be lumps, then rest the batter for 10 minutes.

5. After 10 to 15 minutes add Eno to the batter.

6. Mix it well and pour the batter into a vessel in which you will cook the Dhokla.

7. The vessel should be greased with oil,  first before adding the batter.

8. Now steam cook the batter.

9. For that take a big vessel, add water into it.

10. Place a stand into the vessel so that we can keep the batter tin/vessel into the water vessel.

11. Now place the tin, close and steam cook for about 20 minutes, on low/ medium flame.

12. After 20 minutes open the lid and check weather the Dhokla is cooked perfectly.

13. Take the Dhokla out from the boiling water and let it cool down.

14. Take a Pan, add oil.

15. Then add mustard seeds, when it crackles add green chilies.

16. Add a few curry leaves, then add 1/2 cup of water.

17. Now add salt to taste, 2 tsp of sugar, once the water comes to boil, switch off the flame.

18. Add some chopped coriander leaves, keep this aside.

19. Tap the tin and remove the Dhokla from the tin.

20. Cut it in spices, then pour the water and sugar mixture over it, after 10 minutes serve it with some green and red chutney.

  • Semolina (suji) 1 cup
  • Curd 1 cup
  • Green chilies 4-5
  • Water as needed
  • Salt to taste
  • Sugar 3 tsp
  • Oil 3 tsp
  • Mustard seeds 1 tsp
  • Curry leaves.

Recipe Process

1. Take a bowl add suji in it, then add curd(blend the curd into a blender with 1 green chili).

2. Mix it, add water as the batter is thick, add the water slowly.

3. Let the batter rest, till then we will boil water.

4. For that take a big vessel add water to it, cover the lid and let it come to boil.

5. After 10 minutes add salt to taste, sugar, mix it well.

6. Then add Eno, mix, and pour into a tin.

7. Grease the tin before pouring the batter.

8. Now place it into the vessel which we have kept for boiling.

9. Cover and cook for 20 minutes, then check it and let it cool down.

  • 1/2 tsp Garlic
  • Water as needed
  • Lemon juice 2 tsp
  • Sugar 4 tsp
  • Oil  2 tsp
  • Turmeric powder 1/4 tsp
  • 1/2 tsp Baking soda
  • 1/2 tsp Baking powder
  • Mustard seeds 1 tsp
  • Curry leaves 10-15.

Recipe Process

1. For making Moong Dal Dhokla, first put one cup soaked Moong Dal in a blender, add 2- 3 green chilies, garlic.

2. Add 2 tsp lemon juice, 1 tsp sugar, oil, little bit water.

3. Blend it into a fine paste.

4. Transfer the Moong Dal mixture into a bowl, then add salt.

5. Add turmeric powder, mix this all together,  add water if needed.

6. Now add baking soda and, baking powder.

7. Mix it well, then add the moong dal mixture into a greased tin.

8. Now steam it, Take a big vessel place a stand and, add water.

9. Let the water boil, then keep the tin into it.

10. And cook for 15 minutes with cover.

11. After 15 minutes open the lid and cook for 2 minutes.

12. Then remove the tin from the boiling water, let it cool down.

13. Now take a pan, add oil.

14. Then add mustard seeds, after 1 minute, add curry leaves.

15. Add green chilies, fry for 2 minutes then add 1/2 cup of water.

16. Then add 2 tsp Sugar, cook until the boil comes, then switch off the flame, Let the syrup cool down

17. Transfer the Dhokla to a plate, pour the syrup on it, add some chopped coriander leaves, and cut it into pieces.

  • The batter of urad dal and rice 2.5 cups
  • Curd 1/2 cup
  • Oil 3 to 4 tsp
  • Curry leaves 10-15
  • handful of Coriander leaves
  • Green chilies 2
  • Ginger garlic paste 2 tsp
  • Mustard seeds 1 tsp
  • Salt to taste
  • Eno 3/4  tsp
  • Water as needed

Recipe Process

1. For making Khatta Dhokla we will first mix the masala in the batter.

2. Grease the plate with oil.

3. Now take the batter of urad dal and rice add ginger paste, green chilies.

4. Add salt to taste, 2 tsp oil and, mix it well.

5. Then add curd,

6. Mix it well.

7. Now add Eno, to make it more spongy.

8. Mix this well, do not mix this for a long time.

9. Then pour the mixture into a tin in which we will steam it.

10. Now take a big vessel in which we can place the tin,(can also use a steamer).

11. In that vessel place a stand and add 2 cups of water in it.

12. Let the water come to boil then place the tin in it.

13. Cover the vessel and cook for 20 minutes.

14. After 20 minutes open to led and check the Dhokla, if it’s properly cooked then remove from the vessel and let it cool down.

15. Take a Pan, add 2 tablespoons of oil.

16. Once the oil is hot then, add 1 tsp mustard seeds and curry leaves.

17. Now add the tadka on the top of the Dhokla, spread evenly.

18. Garnish with some chop coriander leaves, and serve it.

The Cheese Dhokla is a dish that is very simple to make and can cook very fast.
This dish is mostly liked by children.

Recipe Ingredients

  • Semolina 2 cups
  • Salt to taste
  • Sugar 1 tsp
  • 2 tsp Oil
  • Yogurt 2 cups
  • Water as needed
  • Eno 3 tsp
  • Cheese 1 cup
  • Mustard seeds 1 tsp
  • 5- 6 Curry leaves
  • Handful Coriander leaves.

Recipe Process

1. Take semolina (suji) in a bowl.

2. Add salt and 1 tsp of sugar.

3. Then add 1 tbsp of oil.

4. Add 2 cups of beaten yogurt.

5. Add 1cup of water, and mix it well, keep this aside.

6. Now take a vessel, add 2-3 cups of water, place a stand, and let it come to boil.

7. Then take the mixture, add Eno in it and, give a mix.

8. Now pour the half mixture into a greased tin.

9. Then add grated cheese on the top of the mixture.

10. Now add the remaining mixture on the cheese.

11. Place the tin into the vessel with water, keep the tin carefully.

12. Cover the lid and cook for 15 minutes.

13. After 15 minutes remove the tin from the vessel, and let it cool down.

14. Till that time we will make the tadka.

15. Take a Pan, add 2 tablespoons of oil.

16. Once the oil is hot then, add 1 tsp mustard seeds and curry leaves.

17. Now add the tadka on the top of the Dhokla, spread evenly.

18. Cut it into pieces and serve with chutney.

  •  Coriander leaves 2 tsp (Chopped)
  • Oil 9-10 tbsp.

Recipe Process

Now we will make the most interesting, yet important part of this dish, the Tandoori tadka.

14. For the same, take a bowl, add 2 tbsp of red chili paste ( which is of red chili, oil, salt).

15. Add 1/2 tsp of chat masala, 1 tsp of chopped mint leaves, and 2 tsp of coriander leaves.

16. Then add 1/2 cup of curd, give it a mix and ensure it combines all together.

17. Now take a Pan, add 1 tsp of oil.

18. Heat the oil, then add mustard seeds.

19. Add this tadka into the curd marination.

20. Cut it into pieces, as per your preference.

21. Dip the dhokla piece into the marination.

22. Now heat a pan, add oil.

23. Place the pieces into the pan, and cook for 30 seconds each side.

24. Then transfer it to a plate and serve.
