Puran Poli is a sweet dish, which origin is from Andra Pradesh. Puran Poli is made from wheat flour and it’s stuffing is made from chana dal, water, Jagger, Jinger (sunth) powder, fennel powder, and ghee.
In Maharashtra Puran Poli is mostly made while festivals, and is very common. Puran Poli is also known as Bobbattu, God Poli, Holige. The Puran Poli is served with plain white rice, Amti, with plan milk or with coconut milk or jaggery syrup. Puran Poli Recipe is mostly followed by Marathi and Hindi People.
1) Puran Poli Recipe in Pressure Cooker

Recipe ingredients
- Chana dal 1 cup
- Water as needed
- Salt to taste
- Oil as needed
- Wheat flour 2 cup’s
- Maida 1/2 cup
- Turmeric powder 1/4 tsp
- Cardomom powder 1/4 tsp.
Recipe process
1. Take a bowl add chana dal and water in it and soak this for 3 hours.
2. Now take a pressure cooker, add that soaked chana dal.
3. Then add 3 cups of water, 1 tbsp of oil.
4. And cook until 5 whistles.
5. Then remove the cooked dal from the pressure cooker, and drain all the excess
water.
6.Let it cools down and rests for 30 minutes.
7. Now take a bowl, add 2 cups of wheat flour.
8. And 1/2 cup of maida, add 1/4 tsp of turmeric powder.
(The turmeric powder is totally optional, you don’t want your Puran Poli to get a yellow color then you can skip this step)
9. Now add salt to taste and mix this all together.
10. Add 1 cup of water and knead the dough.
( You can adjust the water)
11. Knead a nice and soft dough, then add 1 tsp of oil and knead again and let it rest for 30 minutes.
12. Now take a pan, add the chana dal which we have to keep for resting.
13. Add 1 cup of jaggery, mix well.
14. Let the jaggery melt, cook, and stir continuously.
15. Cook until it holds shape, let the mixture cool slightly.
16. Now take a blender, add the chana dal and jaggery mixture into the blender.
17. Add 1/4 tsp of cardamom powder and blend the mixture into a smooth mixture.
18. Transfer the mixture over a sieve.
19. Press and pass the mixture through a sieve.
20. Our soft Puran stuffing is ready.
21. Now take the wheat flour and maida dough and again knead for 2 minutes.
22. Make small sized balls from the dough.
23. Now flatten slightly with the help of fingers.
24. Make small sized balls of Puran stuffing, place on the dough, and press the edges.
25. Stuff the Puran into the dough, flatten little.
26. Spread some atta or wheat flour and roll around, Puran Poli.
27. Heat a pan or tawa place the rolled Puran poli on it.
28. Then flip the Puran poli, press gently, and apply some oil or ghee.
29. Flip on the other side and again apply oil.
30. Let the Puran poli cook completely, then transfer to a plate.

Recipe process
1. Take a vessel, add chana dal In it.
2. Add 3 cups of water into the vessel.
3. Then add salt as per taste, and add 1 tbsp of oil.
4. Let the chana dal cook for 20- 30 minutes.
5. The chana dal should be soft then switch off the flame.
6. Now strain all the water from the chana dal.
(You can use this strained water for making Amti )
7. Now again keep the vessel of strained chana dal on the flame.
8. Then add elaichi powder, sunth powder, and fennel powder in it.
9. Add 1 cup of Jagger into it.
10. Now mix this mixture very well.
11. Cook until the jaggery melts completely, then switch off the flame.
12. With the help of a Puran maker, make a smooth paste of the Puran.
( If you don’t have a Puran maker container you can blend the mixture into a blender.)
13. Now take a bowl, add 2 cups of wheat flour.
14. Now add salt to taste and mix this all together.
15. Add 1 cup of water and knead the dough.
( You can adjust the water)
16. Knead a nice and soft dough, then add 1 tsp of oil and knead again and let it rest for 30 minutes.
17. Now take the wheat flour again knead for 2 minutes.
18. Make small sized balls from the dough.
19. Now flatten slightly with the help of fingers.
20. Make small sized balls of Puran stuffing, place on the dough, and press the edges.
21. Stuff the Puran into the dough, flatten little.
22. Spread some atta or wheat flour and roll around Puran poli.
23. Heat a pan or tawa place the rolled Puran poli on it.
24. Then flip the Puran poli, press gently, and apply some oil or ghee.
25. Flip on the other side and again apply oil.
26. Let the Puran poli cook completely, then transfer to a plate.
3) Amti (Katach Amti)

Recipe Ingredients
- Chana dal 1 cup

- Red chili powder 2 tbsp
- Garam masala 1 tsp
- Coriander leaves
- Onion 2
- Grated coconut 1/2 cup
- Curry leaves 7-8
- Garlic cloves 5-6.
Katach Amti process
1. Take a bowl, add 1 cup of chana dal init.
2. Wash the chana dal with water nicely.
3. Now transfer this chana dal to a pressure
cooker.
4. Add 1 glass of water into the pressure cooker, close the lid and let it cook till 4 whistles.
5. After 4 whistle switch off the flame and let the pressure cooker cool down.
6.Then separate the cooked chana dal and water.
7. We are going to use only the chana dal water.
(you can use the chana dal in any other recipe)
8. Now take a pan let it heat.
10. Then add chopped onions to it once the onions are fried then transfer it to a plate.
11. Into the same pan add grated coconut and fry until it’s golden, transfer it to the plate.
12. Now take a blender jar, add the fried onions and coconut to it.
13. Add coriander leaves and garlic cloves.
14. Then add red chili powder, garam masala, and salt to taste.
15. Blend this all together into a fine paste.
(Try not to add more water while blending )
13. Now take a vessel, add 4 tbsp of oil to it.
14. Once the oil is heated then add the grounded paste stir for 2 minutes.
15. Cook until the paste separates oil from it, then add curry leaves.
16. Now add the chana dal water in it, mix well.
17. Adjust the water, then add chopped coriander leaves.
18. Cook until it comes to a rolling boil, let it boil for more than 2 minutes.
19. Switch off the flame and serve the amti.
Amti (Katach Amti) Recipe
Ingredients
- 1 cup Chana dal
- as needed Water
- to taste Salt
- 2 tbsp Red chili powder
- 1 tsp Garam masala
- Coriander leaves
- 2 no Onion
- ½ cup Grated coconut
- 7-8 no Curry leaves
- 5-6 no Garlic cloves .

- Water as required
- Roasted rice 2 tbsp
- Ghee 1 tbsp.
Recipe process ( how to make coconut milk at home )
1. Grate coconut, then grind the coconut into a blender, keep this aside.
2. Take 2 tbsp of rice roast it, then soak it in water for 10 minutes.
3. Then blend this soaked rice in a blender and keep this aside.
4. Now take a vessel, add ghee to it.
5. Add the elaichi powder to it.
6. Mix the blended coconut mixture and
blended rice.
7. Now pour this coconut mixture into the vessel of ghee and elaichi powder.
8. Mix this well, and add water as required.
(check the consistency of mixture how thick you want and as per that you can adjust the water)
9. Add 1/2 cup of sugar into the coconut mixture.
( You can also use jaggery instead of sugar)
10. Now boil this mixture till it comes to a rolling boil, then switch off the flame.
Coconut milk
Ingredients
- 1 cup Coconut
- 1 tbsp Powder
- ½ cup Sugar
- as required Water
- 2 tbsp Roasted rice
- 1 tbsp Ghee
